Pineapple Upsidedown Pudding


This is a favourite of mine, a winter pud thats classic. As you can see i went too big for the plate. The way this is made is that the pudding dish needs greasing, then melt 2oz of butter in a pan. When melted add 2oz of soft brown sugar and melt together, add this to the pudding dish.

Put the pineapple rings (I had chunks) into the dish on top of the butter / sugar mix.


Next cream 8oz of butter with 8oz of sugar together until light and fluffy. Then mix in 4 eggs.


Finally add 12oz of flour and fold in until mixed, If the mix is still a bit dry use some milk. Pour the mix over the pineapple and bake at 180C for about 1 hour. This is a big one, so you can halve the ingredients, but the cooking time stays the same.

Once the pudding is baked turn out onto its serving dish. Cut up and serve with icecream or custard.

    1. A pudding historically was like a sponge steamed to cook. But in this day and age its normally just a sponge of some type. Crumbles, pies and the like are often called pudding, but thats just another name for the sweet course.

      1. Its about how you serve it i guess. Cake will be served on a plate, youll pick it up and eat it, unless youre posh then you’ll use a fork.
        Pudding you serve in a bowl with custard or something and eat with a spoon.
        We call loads of things cake.

  1. Rarely cook charlottes now because of the calories – I used to do rings with maraschino cherries in the middle at the bottom of the dish, but omitted the butter and sugar. Looks great! Happy New Year.

      1. Oh, I was less posting, but was posting. So you should definitely take a look at my blog. I was reading a bit more posts and preparing some new memes. Other than that we had quite some gatherings and visits to do, I slept longer… yay! We are painting two rooms and one boy moves to the room of my daughter… so … still stuff to do… but much more relaxed 🙂 And what were you up to?
